Sinfully yummy — but not sinfully high in calories — this healthy take on traditional cheesecake blends low-fat yogurt or cream cheese with toasted muesli and a fruity combo bursting with vitamin C.

Dessert on a diet: kiwi cheesecake with lime honey

A tasty treat you've got to try!

Ingredients:

  • 125 ml (1/2 c) muesli
  • 250 ml (1 c) low-fat Greek yogurt or low-fat cream cheese
  • 5 ml (1 tsp) confectioners' sugar
  • Grated zest of 2 limes, divided
  • Juice of 1 lime
  • 30 ml (2 tbsp) honey
  • 4 ripe kiwi

Instructions:

  1. Preheat the broiler to high. Cover the broiler pan with foil and sprinkle the muesli evenly over it. Toast the muesli under the broiler for two minutes, stirring once or twice to prevent it from burning.
  2. Mix the yogurt or cream cheese with the confectioners' sugar and zest of one lime. Stir the lime juice into the honey. Peel and slice the kiwis.
  3. Divide half of the toasted muesli among four dessert plates or bowls, spooning the cereal into small mounds. Top with the yogurt or cream cheese and sprinkle with the rest of the muesli. Flatten each portion into a 'cake' using a knife or the back of a spoon.
  4. Arrange the kiwi slices on top of each cheesecake and sprinkle with the remaining lime zest. Drizzle with the lime and honey mixture just before serving.

Some delicious substitutions

  • Try three crushed chocolate-chip cookies per portion instead of muesli.
  • To make a red berry cheesecake, use a handful of raspberries or ripe strawberries per portion to replace the kiwi.
  • For a more substantial dessert, coarsely mash two bananas and mix them with the yogurt or cream cheese in step 1.

  • Instead of mounding the cheesecakes on plates, layer the muesli, cheese and fruit into 7.5-centimetre (three-inch) cooking rings to form a tidy shape.
