This recipe takes 5 minutes to prepare, 15 to cook, and 5 hours to freeze. It serves 4. Here's what you'll need:

  • 400 g (1 3/4 cups) blueberries
  • 75 g (1/3 cup) plus 30 g (2 tbsp) superfine or granulated sugar
  • 2 egg yolks
  • 240 g (1 cup) low-fat Greek yogurt
  • 1 ripe banana
  • 1.25 g (1/4 tsp) ground cinnamon
  • 1/2 lemon
  • 240 g (1 cup) low-fat plain yogurt

Put it all together!

  1. Place blueberries in a small pot with 30 grams (2 tablespoons) sugar and 30 millilitres (2 tablespoons) of cold water. Bring to a boil over high heat, then lower the heat and simmer the fruit for five minutes. Let cool.
  2. Whisk two egg yolks in a bowl with 75 grams (1/3 cup) sugar and 240 grams (1 cup) low-fat Greek yogurt. Transfer to a small pot and warm gently over low heat, stirring continuously for 10 minutes or until the mixture thickens slightly. Remove from the heat.
  3. Mash one ripe banana with ground cinnamon, lemon juice, and 225 grams (1 cup) low-fat plain yogurt. Stir this mixture into the pot. Add the blueberries with any juice and stir again.
  4. Freeze in an ice-cream maker following the manufacturer's directions or transfer to a covered plastic container and freeze for at least five hours, removing from the freezer every hour and beating to remove any ice crystals.
  5. When ready to serve, leave the frozen yogurt at room temperature for 15 minutes to thaw slightly before scooping into bowls. For an extra tasty treat, serve on top of cookies or wafers.
